Stefano Stecca | Head Chef
Passionate about excellent seasonal produce and fresh, flavoursome Italian food, Stefano Stecca first trained in his hometown of Rimini, before travelling widely throughout Italy – developing his knowledge of regional Italian fare and the essential skills of the trade.
Moving to London in 1999 to enrich his culinary repertoire and learn from other cultures, Stecca joined the team at Michelin-starred Zafferano in Knightsbridge, working as Sous Chef alongside renowned chef Giorgio Locatelli. From here, he went on to spend time at Rosmarino, in St John’s Wood, and 5 Pollen Street, as well as heading up the team at Brunello in the Baglioni Hotel and at Novikov.
During this time, Stecca was also invited to visit the Okura Hotel in Tokyo and the Baltschug Kempinski Hotel in Moscow, where he headed up the kitchens as a guest chef. In 2012, Stecca moved to The Wellesley Hotel to help launch The Oval Room.
Stefano manages a 20-strong team at Toto’s, relishing the mix of cultural and culinary influences and diverse skill-set this team brings. He favours a hands-on approach, assisting his team across every detail from mise en place to tastings.
Luca Boschian | General Manager
Born in Italy (Friuli Venezia Giulia), Luca moved to the UK IN 2006 where he started his hospitality career as Sommelier in the most prestigious Italian Michelin starred restaurant in London, Zafferano.
Between 2008 and 2009 Luca had a brief, but very intense and enjoyable experience at Gordon Ramsey at Clardiges and Murano Restaurant of Angela Harnet.
He then returned to Zafferano with the role of Assistant Restaurant Manager. Between 2012 and early 2015 Luca managed with great success the famous Italian restaurant in Mayfair, Alloro restaurant.
When it comes to service, Luca aims to make guest satisfaction his number one priority.
In his current role as General Manager at Totos, Luca strives to continue to learn and be challenged in his role, providing excellent costumer service for his guests and happiness for his staff.
